Litti chokha is one of the traditional Bihar recipes made up of Wheat flour. They are so many traditional recipes in India which are tasty and healthy as well. In addition to that, we can have this as a main course or a snack. This is a stuffed wheat dumpling served with chokha. Chokha curry made with roasted brinjal, tomatoes and boiled potatoes. Traditionally, Litti chokha is the baked recipe. But can deep fry this litti chokha if the oven is not available.

How to make Fried Litti Chokha On Gas:

To make this litti chokha, first, made the atta dough with salt and water for covering. After that rest the dough for 20 mins. For the stuffing, mix the sattu with onions, green chilis, garlic, coriander leaves, ginger, ajwain, kalonji, salt, and lemon juice. After that, stuff the atta balls with the stuffing and deep fry them. For the dipping, mash the roasted brinjal, tomato, boiled potato and add chopped onions, garlic, green chilis, coriander, and salt. Serve the hot Litti with the chokha.

Wheat flour/ Atta: Wheat flour/Atta used for the covering. wheat flour is very healthy. Above all, It mainly composed of carbs and a great source of fiber. So it improves the digestion.

Spices: spices like green chillis, ajwain, kalonji used in the stuffing. Green chilis improve your metabolism and they are a good source of iron. Kalonji adds extra flavor and taste to the recipe. Ajwain helps with the digestion and helps with the common cold.

Chokha: This recipe consists of Brinjal, tomato, potatoes, and onions. This chutney is the authentic recipe of Bihar. This chutney doesn’t have any oil or it won’t have any cook time. Easy to make and can use for rice as a side dish. If there is the availability of charcoal grill try to roast in charcoal it tastes so authentic and gives you the real flavors.

Sattu: Sattu is the star ingredient of this recipe. In this recipe, we are using sattu for the stuffing. Can make different recipes with sattu like sattu paratha, sattu halwa, sattu laddu, sattu drink. Moreover, Sattu is very healthy. It very nutritious and helps to cool down in summer. Great for digestion, controls diabetes also. Basically sattu is the fried chana dal flour. Can make it at home easily or else it is easily available in the market these days.

Ingredients

Ingredients for covering

  • 1 cup Atta/ Wheat flour
  • 1 tsp salt
  • water as required
  • 1 tbsp oil

Ingredients for stuffing

  • 3/4 cup sattu
  • 2 tbsp onions
  • 1 tbsp green chilis add according to your taste
  • 2 tbsp garlic
  • 2 tbsp ginger
  • 3 tbsp coriander leaves
  • 1 tsp kalonji
  • 1 tsp ajwain
  • 1 tbsp lemon juice
  • 1 tsp salt adjust according to your taste
  • 1 tbsp oil
  • 1 tbsp pickle( any pickle available for you)

Ingredients for dipping

  • 1 brinjal
  • 1 tomato
  • 1 potato
  • 2 tbsp onion
  • 1 tbsp green chillis
  • 1 tbsp garlic
  • 2 tbsp coriander leaves
  • 1 tsp salt adjust according to your taste
  • 1 tbsp oil

Instructions

Pre preparation:

  • Take a mixing bowl and add atta to the bowl. Then add salt, oil to the atta and mix well. Add water slowly and knead a dough. The dough should be a little hard than a Chapathi dough. Now cover the dough and rest for 20 mins.
  • Chop the onions, garlic, green chilis, ginger, coriander leaves and keep them aside.

Preparation for stuffing:

  • Take a bowl and add Sattu to the bowl. Then add chopped onions, garlic, ginger, green chilis, coriander leaves, ajwain, kalonji, lemon juice , salt, Pickle, and oil. Now mix the all ingredients really well. Can add little water or oil for the correct consistency.

Making of Litti:

  • Take the atta dough and make equal balls with the atta.
  • Now make the cup with atta or roll it as a circle. now fill it with stuffing and get the edges together.
  • Repeat the same process for other Litti also.
  • Now heat the oil on the medium flame and drop the stuffed dough balls in the oil and deep fry them on the medium flame.
  • Both the sides of the Litti should be in brown color. Can bake these Litti in preheated oven for 20 to 25 mins.
  • Take them out and apply ghee and turn them to the other side and bake again for 10 mins or until they are done.

preparation of chokha:

  • firstly, take an eggplant and tomato, roast them on the high flame directly.
  • Now take a potato and boil the potato in the pressure cooker.
  • Now peel the skin of the eggplant, tomato, potato and mash them with a fork or potato masher.
  • After that add chopped onions, green chilis, garlic, coriander leaves, salt, and oil. now mix them together.
  • Now serve the hot Litti with Chokha.
